When awareness and experience become knowledge, progress becomes exponential. By going through experimentation, sometimes it is possible to achieve surprising and satisfying results.
This is our journey with Il Grifone. 100% Montepulciano, it gives us intense moments during which we immerse ourselves in the folds of its essence. Soft and juicy notes of plums in syrup alternate with darker hints of black tea followed by scents of violets.
Then the wine hints of green, recalling balsamic sensations and very fresh bay leaves. Upright and of great structure, it gives you a sip in which to get lost for hours.

REFINEMENT
Maturation in 30 hl Slavonian oak barrels for 24 months and further refinement in the bottle for at least 6 months.

The peregrine falcon is one of the symbols of the animal biodiversity of this land. It prefers rocky walls and it has found a home among our gullies, on the slopes of our Grandi Calanchi vineyards. We toast to it is to its elegance and contempt for danger.

CARES IN THE PREPARATION

Manual harvest and selection of bunches, from the second ten days of October. Vinification with maceration of black grapes at a controlled temperature not exceeding 28°C with subsequent post fermentation maceration.

Talking about microclimate, soils, the set of factors that determine the uniqueness of a territory, what is called terroir, is of primary importance.

These elements define the character of a wine, they influence its sensorial traits.
Aromas and flavors will develop during fermentation and maturation, enriching the wine with hints that originate in the nature of a specific territory.

All this creates the peculiarities that see the first and main gustatory definition in the vine within a macro-area.
